The easiest method to delete a game is to scroll over it on the PS5 User Interface, press the Options Button and click Delete.
Alternatively, for a list of all your games and how much space they take up, go to: PS5 Settings > Storage > Console Storage > Games and Apps > Select Game > Delete > OK
After deleting a game you can install it again at any time.
