Gotham Knights has 60 Batarang Locations. Finding all Batarangs unlocks the Batarang Collector trophy and achievement. They are bat-shaped boomerangs with a blue glow. There are 12 Batarangs per district. There are 5 districts, consisting of 2-3 subdistricts each.
None of the Batarangs are missable. You can still get all of them after the story in free-roam. The entire map is open from the beginning so you can start collecting right away. The collectible progress also carries over into New Game+.
You can keep track of which districts you completed by scrolling over them on the map. In the bottom right corner it shows the 4 collectible icons. If you found all of a type in that district, it gets a green checkmark. This way you know you got everything. You can also keep track of them under Challenges > Collectibles.
Most of them are found on top of buildings. But some can be on smaller sheds near the street level too.

Southside
Batarang #1: At the pier by the water, on a wooden beam.
Batarang #2: Under a bridge, inside a container. You must climb up the container and drop down into it.
Batarang #3: At the docks, on the big shipping crane, the last one closest to the water.
Batarang #4: High up on roof of Waynetech, but not the very top roof. WayneTech consists of two towers, it’s on the roof of the smaller tower.
Batarang #5: Halfway up a metal tower, must grapple up.
Batarang #6: Very top of STAR Labs.
Batarang #7: At the top of a dome-shaped building.
Batarang #8: At top of the train yard building.
The Cauldron
Batarang #9: At the top of a tall building, on the building’s sign.
Batarang #10: On a water tower.
Batarang #11: Underneath a bridge. Can be accessed from the alley below the bridge where some shops are.
Batarang #12: On top a smaller house, near bridge by the water.

Batarang #13: Near the top of Elliot Center. From the rooftop it’s just one balcony down (not at the very top of the building’s main roof, but on a smaller roof just below the top).

Batarang #16: At Gotham City Towers Apartment, on small roof between the two towers.

Batarang #52: At the top of the “Robbins” building, behind the blue neon sign.

Batarang #54: At the dam, where the big pipes are connected to the dam. Check at the bottom of where the pipes are.
Robinson Park
Batarang #55: At the dam, on the side of the last building before the dam (when you scroll over this spot on the map it changes between Bristol and Gotham Heights, but it counts towards Robinson Park).

Batarang #57: On a rooftop, can grapple to the pole near it and then drop down to it.
