Mortal Shell 2 includes a similar function to increase difficulty as the first game, where you can choose to change the time of day to night which increases enemy difficulty while increasing drops from them, along with revealing some hidden areas, with one of them being a vendor that sells Tarstones required for the trophy/achievement Stoned.
To unlock the ability to change the time of day, you first need to collect the item Gloombound Flame, which can be found directly south of the Widow’s Overlook Beacon in the northern part of the overworld map. This can be found on one of the stone pillar that are behind where the miniboss Great Arbiter of Flesh is located.
Once you have the Gloombound Flame, return to Marrow Keep and take the elevator back to the top of the tower. On the top there is a golden lantern sitting by a fire, interact with it and use the Gloombound Flame.
This causes the character Thestus to appear. You can then speak with Thestus at any time to change the time of day between day and night. Doing this doesn’t cost any resources like it did in the first game, so you can do this as much as you want without worry.
