Sanity in Arknights Endfield acts as a type of currency that you can spend on Protocol Spaces. These are little combat challenges that give XP Materials to level up your Characters, and also large amounts of Operational XP to raise your Authority Level.
Where to spend Sanity?
Before you can spend Sanity, you must finish Main Mission 8: Building an Outpost. At the end of this mission you are introduced to these combat challenges.
They look like glowing rifts and offer multiple combat challenges of increasing difficulty. The higher the difficulty, the better the rewards. You just need to defeat all enemies to win these challenges. After finding a Protocol Space it can be accessed under Main Menu > Operational Menu.
How to recover Sanity?
Your Sanity refills automatically over time, but you can also recover it instantly by spending Origeometry or Emergency Sanity Boosters. You can refill Sanity directly from the Protocol Spaces, or at any time from the Main Menu by clicking the Sanity Icon at the top (on PS5 press R3 in main menu). You earn a lot of Origeometry from quest rewards and claiming them from other progression rewards. This allows you to quickly raise your Authority Level by playing the Protocol Spaces.
